The recipe comes from the ancient Indian tradition of Ayurveda, or 'science of life'. The essence of the Ayurvedic approach is to balance the wind, fire and earth elements in the body according to the 'doshas' or energies that determine the temperament and constitution of the individual. The three doshas are kapha, vata and pitta, and they can be brought into balance with certain spices.
